Trying to figure out the difference between the two but the earlier model has (not unexpectedly) disappeared from the website.
Is the only difference in the colour of the dial and day/date wheel?

having the ref 3765, I can say there are differences big enough for me to see both as very different...

day/date background discs / hands and hour markers, slightly shorter lug width, and slightly sharper lug angle in the ref 3865, and much stronger blue numerals on the outer dial ring in the ref 3865 ...
(of course I am biased, but) for me the key winning factor is the 3765 hands and hour markers.
I really liked the 3765 but had one major problem reading the time. I think the new 3865 solves that problem emphatically. From a design perspective I agree with Shing...but he has 35 year old eyes! LOL
Love my 3765...but I agree it's not the easiest to read given the double lines on the hands and the hour markers. Anyone know if a titanium bracelet is available for the 3765 yet?
I think, with the new Hamilton Ingenieur Chrono, it might be possible to utilise that Ti bracelet. (I don't have confirmation though.)

Is it possible to have the black day/date of the 3865 inserted in the 3765?
Does anybody have any lume shots of the 3865?
Am I right in presuming the 3765 does not have any lume?

I think you can use the Titanium bracelet with the 3865, but not the 3765. Note that the bracelet releasing button/mechanism is located centrally on the 3765, but on the side of 3865 (and that of the Hamilton).

Having said that though... not sure if one would want to put a titanium bracelet on a Stainless Steel watch. I think it may cause the watch to be top-heavy.
No need to worry though... let's not forget IWC makes a stainless steel version of the same bracelet, as use in watches such as the Dual time:
