They will take a watch movement apart, clean and replacing part as necessary and refinishing the case. As is there is a different service packages, I never heard of that.
When you send the watch to IWC Service through your local, authorized IWC dealer (retailer or local agent) you can verify with them exactly what the default treatment would be. They will also submit specific notes into IWC's service system, where your watch will have a service order # - you can instruct them to omit things such as "do not replace hands", "do not replace crown" "please ensure that case and bracelet are refinished".... or also provide some notes on specific issues with your watch that you want them to correct and test - "please check for power reserve issues, I am observing only 30 hours of power when watch is at rest", or "date is switching/advancing at 10:00pm instead of midnight"....
