My GST has one of IWCs famous (or infamous depending on your take) "fish"
crowns. I really love it as I think it makes the, sometimes, confusing world
of water resistance a little more clear cut. I know my GST is rated to 120m,
but it is not stated on the watch itself, which I personally welcome the lack
of additional text to that effect.

Am I correct in stating that IWC would put the fish on the crown to indicate
sufficent water resistance for swimming? I have not found a ton of
information about this, but I think its a subtle, and very cool, attribute to
    neo-vintage IWC.

Yes the fish showed that it's waterproof for swimming. Even the 30m watches
without screw-in crowns were having this, e. g. the Portugieser Automatic. The
leather straps in those days were another thing and not recommended for
    swimming.

Well, the GST watches mostly are water resistant up to 120m. So even dive
    proof.
