They will keep it, if you tell them to do so. Had my pocket watch in full service and we kept the original dial with a fine haircrack.

Great question, and the answer is not always so easy. As a general rule, IWC would like to return a serviced watch in like-new condition, with a full service warranty. If a tritium dial shows any signs of degradation, where the tritium can be seen crumbling, or pieces missing, IWC may insist that the dial be replaced in order for the service to be performed. A main concern is that degrading tritium may come apart from the dial and then enter and affect the movement. You may be able to convince IWC to perform the service nonetheless, and forgo any warranty on the work performed. I was able to do this with my 3713, but I had to get an executive involved;)
Mr Andreas, did that pocket watch have tritium markers on the dial?
The dial can be kept if clarified in advance.
But the hands will have to be replaced usually. And as Tritium hands are not made anymore, you might have to take Superluminova coated ones.

IWC "strongly suggested" changing the tritium dial and hands after inspecting my watch
I contacted the IWC Concierge to state my position and Lauren advocated for me with the service team who felt the dial and hands were in good enough condition and not an impediment to the service.
Once I received that confirmation in an email I accepted the service and now waiting.
Also, regardless of the what the watchmaker said, Lauren was incredibly pleasant, professional and awesome.

I’d recommend contacting IWC directly or an authorized service center for the most accurate information.
For a neo-vintage model, service requirements can vary quite a bit depending on the movement and production year.
It’s also worth asking whether they can preserve the original hands, dial, and other period-correct parts.
Before sending the watch, get a written estimate and confirm what work is actually necessary.
That way, you can avoid unnecessary replacements and keep the watch as original as possible.
